Eggplant Parmigiana
Ingredients:
2 large eggplants
Mozzarella cheese
Parmesan cheese
Bechamel sauce
Tomato sauce
Basil
Salt and pepper
Optional:
Onion
Garlic
Tomato
Method:
Slice eggplant into thin, 1cm slices. Prep the eggplant by sprinkling it with salt and leaving it to sit for about half an hour to one hour.
Heat the frying pan, then add olive oil. Once hot, add the slices of eggplant and flip until they turn to a light, golden-brown colour. Alternatively, you can roast the eggplant instead of frying it.
Add a light layer of tomato sauce and then a layer of eggplant in a large baking dish. Add béchamel sauce, and sprinkle the mozzarella cheese lightly on top. Repeat this combination two more times. Sprinkle with mozzarella cheese, then top it off with freshly cut basil and Parmesan cheese.
Bake it in the oven for around 20-30 minutes or until it turns light golden brown. Remove once cooked, and serve while hot.
